Brahms Cabernet Sauvignon

Tasting Notes – Bright deep in crimson colour, cedar and spice on the nose, rich, juicy with intense layers of black and red berry fruit that linger on the palate. Youthful tannins are silky and ripe, superb balance and structure. A wine to enjoy while young, but will improve with age. To be enjoyed with all meats, pasta and richly spiced foods.

Vinification – This wine is hard-crafted from grapes harvested by hand. After sorting (all green berries removed) the wine was fermented in small stainless steel tanks at approximately 27°C for six days. Punched down of the cap and pump over was carried out twice per day. Skin contact continued for a further 26 days. Thereafter the skin was lightly pressed to extract the remaining juices.
